Yes, we felt it necessary to introduce our latest culinary conquest with a haiku. How else can you possibly feel the depth of love for the warm, golden goodness that is mac & cheese? With a chill in the air and gray skies above, we felt like now would be a good time to indulge in our favorite comfort food the best way we know how – with the most indulgent and extreme options in our fair city. So, go ahead and loosen your belts, we’re two notches ahead of you, and get ready for SMTXtreme: Mac & Cheese in San Marcos.

 

Pepper Jack Mac & Cheese Bites

Deep. Fried. Mac. And. Cheese. Have sweeter words ever been used together in a sentence? Not in our opinion… Imagine our delight when we visited Cheer & Chow and these little deep-fried nuggets of pepper jack goodness arrived at our table with a divine marinara dipping sauce. With pretty substantial breading holding everything in place, the bites are sturdy and filling. There was no conversation at our table, just mouthfuls of melted cheese.

Stoner Mac

Y’all, let’s just take a second to appreciate the glory that is the (hilariously named) Stoner Mac at AJ’s Ranch Road Grill. This mound of steaming hot pasta is comprised of AJ’s specially seasoned mac and cheese, a quarter pound of chopped smoked brisket and BBQ sauce on the side for you to drizzle on top. Don’t plan on any form of physical activity to take place after your meal. Instead, take what we lovingly refer to as the Stoner Mac siesta in your comfiest pair of sweatpants.

 

Mac Spud

Stop what you’re doing right now and get yourself over to Spud Ranch for a Mac Spud. We guarantee* it’s the only meal you’ll need today. Sarah got her Mac Spud with broccoli (because nutrition is clearly important here) and Charlotte got hers with mushrooms and bacon. There’s a ton of ways to customize your spud, or you can go with pure mac and potato – there’s no wrong way to eat this bad boy!

 

Bacon Mac & Cheese

Kent Black’s BBQ is a joint that will really test your limits. How much brisket can I actually consume in one sitting? How do you eat a rib that’s the size of your arm? Do I have room for all of this delicious Bacon Mac & Cheese? It is not a meal for the faint of heart or weak, it is a meal for champions. And yes, you always have more room for the Bacon Mac & Cheese – it is local law.

 

Mac-N-Cheese & Fried Mac-N-Cheese Bites

Oh Figaro’s Pizza & Pub, you sure know the way to our carb-loving hearts. When our waiter was giving us the mac lowdown he asked if we wanted to add sausage and jalapenos to our Mac-N-Cheese as if we would possibly settle for anything less. It was love at first sight when the dish hit the table. Shaved cheese on top of cheesy penne pasta with crumbled sausage and fresh jalapenos. Yum. A word to the wise – have your water ready because those jalapenos had some kick! The Fried Mac-N-Cheese Bites were served with warm marinara and more cheese on top for good measure.

 

Smoked Pulled Pork & Mac-n-Cheese

Just the memory of this sandwich brings a tear to the eye and a quiver of fear from the button on our pants. Never in our wildest dreams would we have thought to combine Smoked Pulled Pork and Mac-n-Cheese and then nestle it in real cozy between a grilled cheese sandwich, but the geniuses at CRAFThouse Kitchen & Tap made it happen. You might be wondering if there’s cheese holding the mac in place between the grilled Texas Toast and yes, there absolutely was.
